300 g tapioca flour

How to make:

1. Cook water, salt, chicken stock and garlic until boiling.

2. Add flour, stir well, cook until it becomes dough. Lift.

3. Pour the mixture into a large bowl, add the eggs, stir well using a wooden spatula.

4. Add tapioca flour, knead until smooth. Divide the dough into 10 parts.

5. Shape each dough into a cylindrical shape with a diameter of 2 cm.

6. Boil the mixture in boiling water until it floats. Lift, drain.

7. Fry the pempek in lots of hot oil until brown. Lift, drain. Serve immediately with accompaniments.

Tip: Make sure to knead it until smooth to get a springy texture.
